Anisaldehyde is sometimes also called Aubépine (French for hawthorn), because its scent indeed resembles hawthorn blossoms, although it is not naturally found there. This substance is full of soft anise and gourmet almond notes and is soft and light.
Interestingly, in its synthetic form, anisaldehyde is easily obtained, but its natural version is much rarer. The natural anisaldehyde isolate is slightly sweeter than its chemical alternative. It has a more distinctly delicate floral character, is somewhat less anise-like, and more closely resembles the scent of hawthorn blossoms, even slightly reminiscent of dried hay.

In perfumery, anisaldehyde is a widely used isolate, providing a sweet and warm aroma with floral accents.
